Here are a few of our camp-favourite recipes

Hollywood Dave's Famous Wings

2 cups flour
1 cup montreal chicken spice
1/2 cup montreal steak spice
1/3 cup each of the following: garlic powder,onion powder, chili powder
1/4 cup each of the following: curry powder, cayenne pepper, sweet smoked paprika
Mix together, place in bag with wings and shake, deep fry til brown... Makes for a fun evening!

Guide Andrew Smart's Quesadillas

Chop together a variety of colourful peppers, green onions, chicken, beef or pork, add to shredded cheese, place on 10" tortilla and fold when it begins to brown. Delicious!


Guide Roger's Fresh Salsa

Chop together, green onions, cilantro, tomatoes and green pepper
Add 2 tbsp sugar and 2 tbsp vinegar or lemon juiice
Serve with tortilla chips and enjoy!


Guide Roger's Cheese Sauce

4 Tbsp butter
1/2 cup flour
1 cup milk
2 cups shredded cheese
Pinch of salt
Serve with fresh broccoli and/or cauliflower!


Andrea's Best ever Brownies

1 cup butter
2 cups sugar
4 heaping tbsp cocoa
4 eggs beaten
1 cup flour
1 cup walnuts, chopped
1 tsp vanilla
Bake in 9x13 pan for 40 minutes at 350 degrees.
The top will appear to be underdone but do not overcook. They should be moist and chewy.
Icing
2 cups icing sugar
2 tbsp butter
2 tbsp cocoa
2 tbsp boiling water
2 tsp vanilla
Add icing when brownies are still warm so it melts into a shiny glaze... yum! yum!


Lillian's Wild rice

2 cups wild rice, washed and cooked
Salt, pepper
1 tsp beef bouillon
1 fry pan full chopped and cooked bacon
Chop together 2 stalks celery, 2 green peppers, 2 large onions
Add 2 cans mushrooms, 3 carrots shredded
Saute all vegetables and add to rice, serve immediately
Serves 16 people


Broccoli Chicken Casserole

2 10 oz packages frozen or fresh broccoli
1 can cream of mushroom soup
1 can cream of chicken soup
2 cans chopped chicken
2 eggs
1 cup mayonnaise
2 and 1/4 cup grated cheddar cheese
Place in 9 x 13 casserole dish and bake at 350 for 20 minutes
Topping
1 sleeve ritz crackers, crushed
1 stick butter
Remove casserole from oven and top with cracker crumbs and melted butter. Bake 20 minutes longer. Serves 16 - 18 people


Chef Scott's Cinnamon Crusted salmon appetizers

Cut salmon in small pieces
Saute in garlic and butter
Roll in cinnamon
Serve while piping hot... Simple and savoury!


Barb's Key Lime pie

3 cans condensed milk
1 cup key lime juice, bottle or fresh
8 eggs (yolks only)
2 tsp cream of tartar
Mix and place in prepared graham crust
Bake for 10 minutes to set. Cool and freeze for a minimum of two hours
Top with whipped cream and wedge of lime
Makesone large pie to for approx 15 persons
